Cheeky Chocolate and Orange Mousse
2 just ripe avocados, peeled, stoned (over-ripe ones will be unappetising)
½ cup (25g) raw carob powder
2 tbsp agave syrup (or 1 tsp stevia powder or 3 tsp xylitol)
1 orange, zest and juice
2 oranges, peeled, sliced
You will need 4 ramekin dishes or 4 suitable glasses
Place avocado, carob, syrup/sweetener, orange zest and juice into a food processor and blend until smooth.
Lay one slice of orange into the base of each dish or glass and add a tablespoon of chocolate mixture. Repeat until dish or glass is full. Use a knife dipped in hot water to smooth the top for good presentation. Finish with orange slices.
Cover with plastic wrap and pop in the fridge to set for a minimum of 2 hours.
Alternatively, you could freeze the chocolate mousse in a loaf tin lined with plastic wrap (without the oranges) and serve as a chocolate parfait accompanied by sliced, fresh oranges.
