For a traditional Christmas dinner, here is a classic roast turkey recipe prepared by Tony Ching from Grass Tree Kitchen during The SAUCE Kitchen cooking school in Toowoomba.
Traditional Roast Turkey
Ingredients
1 GreenAg Organic Free Range Turkey
1 cup diced onion
½ cup roughly cut carrot
½ cup roughly cut celery
Method
Pre-heat oven to 180oC.
Spread the mirepoix (onion, carrot and celery) on a roasting dish.
Check turkey for feathers and clean the internal cavity then pat the bird dry.
Tuck in the wings so they won’t burn.
Season the GreenAg turkey with salt flakes, cracked pepper then rub with olive oil or Ghee.
Cook the bird for around 2 hours in the pre-heated moderate oven. If the juices in the cavity are clear, the bird is cooked.
Rest the turkey before serving.
