Eatery and grill Original Dave’s in West End aims to capture the spirit of America’s “barbecue belt” in its authentic, slow-cooked offerings.

Owner Dave Hillman too has a long history with this type of cooking, and his passion for barbecue is clear. “I have loved cooking since I was young. The food we serve at Original Dave’s BBQ  is the same food I have cooked at home for the last 20 years… Original Dave’s was born using the same recipes I have developed and refined over the years. I have always been attracted to food that takes time. Smoking meats over a long period leaves many ways you can influence the end result, much like charcuterie and cheese making (other foods I passionately make at home).”

A West End local himself, Dave believes that the suburb is the ideal backdrop for Original Dave’s. “We love West End and all that it offers and we are proud to represent West End with our restaurant.” And even though the area is bursting with eateries, Original Dave’s still manages to bring something unique to the table. “We are the only authentic BBQ restaurant in the 4101 post code. We have a fully licensed bar and feature Queensland craft beers (including West End local beers such as Catchment and Brisbane Brewing Co.) and a fully stocked bourbon bar with some unique offerings.”

But of course, Dave’s pride and joy is his meats,  “cooked low & slow over real cherry wood for authentic flavour”. To accompany a slow-cooked beef brisket or pork shoulder, he offers traditional American “fixens” such as chilli, slaw, Texas beans and cowboy caviar (a kind of mixed salsa). House-made desserts include cherry, pecan and apple pies.
