Alana’s Pantry Spicy India captures the essence of this colourful land through exotic spices and sweet pungent flavour. It is a medium spiced, sweet, tangy green chilli, pineapple and masala sauce inspired by the West Indian Ananas chutney.
Makes: 8 skewers
Prep time: 5-10mins (+marinating time)
Cook time: 2-3mins
8 green banana prawns, shelled, tails on
100ml Alana’s pantry spicy India sauce
50ml cup olive oil
To serve: fresh limes
Soak your skewers in water for approximately 5-10 mins to prevent them burning during cooking.
In a large mixing bowl, add the Alana’s pantry spicy India sauce. Slowly whisk in the olive oil until it is completely combined. Pour half of the sauce mixture into another bowl and reserve to serve with the cooked prawns.
Add the prawns to the remaining sauce and toss to coat and marinate for 5-10mins.
Seat your barbecue or a skillet pan to a high heat. Thread each prawn onto a skewer and place on the barbecue or skillet. Cook on one side for 1-2 mins and then turn and continue to cook for a further 1-2mins or until cooked through.
Serve with the reserved sauce and fresh limes.
